Chicken is one of the healthier meats we can eat. Furthermore, It’s lean and fairly easy to prepare. Now you can add an ingredient that’s helpful for you joints as well.

Waldorf salad is usually made with mayonnaise. However, mayo is a no-no for arthritis sufferers. Instead of mayo, we opted for an olive oil-based sweet mustard dressing.

Olive oil contains oleocanthal, which helps fight inflammation and isn’t found in any other foods. Other ingredients that help reduce arthritis symptoms include walnuts, apple cider vinegar, apples, and grapes. Chicken Waldorf Salad

Time: 25 minutes

Ingredients
1 head Boston or similar-type lettuce
½ cup walnut pieces
4 tablespoons extra virgin olive oil
3 tablespoons apple cider vinegar
2 tablespoons honey
2 tablespoons sweet mustard (or 1 teaspoon dried mustard seeds)
½ Granny Smith apple
½ Gala apple
1 cup seedless red grapes, cut in half
2 stalks celery, chopped into ¼ inch pieces
2 large or 3-4 small chicken breasts, cooked and chopped into bite-sized pieces

Serves 4

Directions

Preheat oven to 300 degrees F.

Spread walnut pieces on a shallow baking sheet and toast in the oven for 10 minutes.

Firstly, In a small food processor, combine a just few walnut pieces, extra virgin olive oil, apple cider vinegar, honey, and sweet mustard. (If you don’t have a food processor, whisk the ingredients together but leave out the walnuts). Transfer to a medium-sized mixing bowl.

In addition, you can add to the dressing: toasted walnut pieces, apples, grapes, celery, and chicken. Stir well until all ingredients are coated. This can be stored in an airtight container until the next day, if desired.

Break leaves from the lettuce head and divide onto 4 plates or salad bowls. With a large spoon, divide the dressing mixture onto to the lettuce.
